Merlot, a grape variety, was initially mentioned as "Merlau" in 1784, translating to "blackbird" in Southern French. In 1824, it became known as Merlot. "Madrasa" (Matrasa) is an indigenous variety of red grape, predominantly grown in the mountainous regions of the Shirvan district, with the highest point at the summit of Mount Babadag, which reaches a height of 3629 meters. The variety is named after the village of Madrasa in the Shamakhi district of Azerbaijan (Shirvan region). Madrasa wine constitutes the so-called "golden fund" of Azerbaijan's ancient winemaking tradition. From the Madrasa variety, rich red wines are produced. They are abundant in aromas of raspberry and wild berries, with a prolonged aftertaste.
