"Madrasa" (Matrasa) is an indigenous variety of red grape, predominantly grown in the mountainous regions of the Shirvan district, with the highest point at the summit of Mount Babadag, which reaches a height of 3629 meters. The variety is named after the village of Madrasa in the Shamakhi district of Azerbaijan (Shirvan region). Madrasa wine constitutes the so-called "golden fund" of Azerbaijan's ancient winemaking tradition. From the Madrasa variety, rich red wines are produced. They are abundant in aromas of raspberry and wild berries, with a prolonged aftertaste.
Merlot, a grape variety, was initially mentioned as "Merlau" in 1784, translating to "blackbird" in Southern French. In 1824, it became known as Merlot. It has become a global cultivar, grown on every continent except Antarctica. Wines of this variety are characterized by cherry-plum aroma with hints of olive, rosemary, mushrooms, and tobacco. Rkatsiteli — is a popular technical variety of white grapes hailing from Georgia, but it is also distributed in other countries, including Azerbaijan. By the way, the name “ Rkatsiteli” means “ red vine ”. The vine got this name for its color - its petioles have a reddish hue. Rollers do not belong to aromatic varieties of white grapes. Standard wines are neutral in aroma, while amber wines insisted on the skin « are opened by shades of kuraga, raisins, notes of dry herbs and orange cedars ».
